The protein quality of cassava leaves.

چکیده

2. The protein content of the leaves was from 3 0 to 40 yo (expressed as percentage of leaf dry matter). The concentrations of essential amino acids were adequate, except for methionine. The biological criteria, true digestibility (TD) and biological value (BV), showed that the digestibility was from 70 to 80 yo, whereas BV varied from 44 to 57 yo, depending on the methionine content. 3. Adding methionine to a diet of cassava leaves raised BV from 49 for the leaves alone to 80 for the mixture. This relationship clearly shows that cassava leaves contain too little available methionine. An investigation into the true availability of the amino acids showed that this is somewhat variable, and only 60 Yo of the methionine is available. 4. The BV of cassava leaves combined with Norwegian dried cod showed a mutual supplementation effect. (Munihot utilissima).

Sensorial evolution of cassava flour (Manihot esculenta crantz) added to protein concentrate cassava leaves

Cassava is regarded as the nutritional base of populations in developing countries, and flour, product made of cassava, is the most consumed in the world. The cassava leaves are very rich in vegetable proteins, but a big amount is lost in processing the crop. The objective of this study was to do a sensory evaluation of cassava flour to which a protein concentrate obtained from cassava leaves (...

Preservative effects of kaffir lime (Citrus hystrix DC) leaves oleoresin incorporation on cassava starch-based edible coatings for refrigerated fresh beef

The chemical compounds of kaffir lime leaves oleoresin and the preservative effects of kaffir lime leaves oleoresin incorporation on cassava starch-based edible coatings for fresh beef during 14 days refrigerated storage were investigated to determine their ability to extend beef shelf life. Beef characteristic was determined based on microbiological (Total Plate Count/ TPC), chemical (Total Vo...

Mild method for removal of cyanogens from cassava leaves with retention of vitamins and protein.

A mild method was developed to remove cyanogens from cassava leaves that involved three consecutive steps (1) pounding, (2) standing for 2h in the sun or 5h in the shade in the tropics and (3) washing three times in water. Four cassava cultivars were used and the mean residual total cyanide content after steps 1, 2 and 3 was 28%, 12% and 1%, respectively. The pounded cassava leaves retained the...

Cassava Leaves as a Source of protein

Analysis of cassava cultivars and interspecific hybrids leaves revealed a protein percentage ranges from 21% to 32%. Polyploid types did not show significant increase. Varieties with low HCN content can be selected to enrich flour of cassava and other grain crops. Interspecific hybrids with very vigorous vegetative growth are good sources of protein. They can be used for raising...
